About Ohigashi
A type of Japanese sweet, ohigashi is commonly eaten with Japanese teas to counterbalance any bitterness the tea may have. It is served in Japanese tea ceremony alongside usucha, ceremonial matcha whisked into a froth.
This ohigashi is made from wasanbon, a fine-grained Japanese sugar made from sugarcane plants known as taketō. Wasanbon is considered one of the highest grades of sugar in Japan, with the process of harvesting, drying, kneading, and sieving taking about 20 days.
Wasanbon is mixed with a small amount of water, pressed into molds, and dried to create ohigashi.
