This hōjicha is crafted from tsuyuhikari, cultivar known for deep umami. That this hōjicha utilizes leaves from the year’s first harvest and is crafted from a single cultivar makes it an elevated take on the popular beverage. It was lightly roasted—twice—to maintain the cultivar’s natural characteristics.
Tsuyuhikari is an uncommon cultivar crafted from the asatsuyu cultivar—known for a deep umami profile—and shizu7132—known for its cherry blossom-like aroma.
